CocoRay’s, a “taquería borinqueña” that serves a variety of Mexican cuisine including tacos, burritos and quesadillas, officially opened on Friday, May 25th, 2018 at 197 Parker Street, corner of Andover St., in Lawrence.
After almost three years doing business from a traveling taquería and moving to a location at 420 Common Street in downtown Lawrence, on the campus of Northern Essex Community College, thanks to a program established by Lupoli Companies, the City of Lawrence, the Lawrence Partnership and Northern Essex Community College (NECC) called Revolving Test Kitchen (RTK), Raymond Gonzalez is beginning to live out his dream of having his own restaurant.
“Supporting the business ecosystem in the Merrimack Valley is crucial, and the Entrepreneurial Kitchen will encourage the growth of local businesses,” said Sal Lupoli, President and CEO of Lupoli Companies, when González accepted the challenge of being the first participant of this program, to which Lupoli Companies contributed $113,000 in state-of-the-art equipment for high quality equipment and furniture for customer seating.
